|Hazelnut Chocolate Chip Cookies
(Makes about 48 cookies)
Grandma Holmquist has been making these cookies for many
years and generously hands them out to her hardworking clan.
They are an all-time favorite.
Note: Toasting the hazelnuts is an important step, as it draws out
the nut’s characteristic flavor. It’s one of those simple techniques
that yields big results and shouldn’t be skipped.
1 ½ cups firmly packed brown sugar
½ cup white sugar
1 cup canola or Wesson oil
2 teaspoons vanilla extract
1 teaspoon salt
1 teaspoon baking soda
2 ½ cups flour
1 cup chopped lightly toasted hazelnuts
1 cup chocolate chips
Preheat oven to 350°F.
1. In a large bowl, beat eggs well. Add sugars and beat until
well-blended. Add oil and vanilla.
2. Sift in dry ingredients and add hazelnuts and chocolate chips.
3. Drop by rounded teaspoons onto cookie sheets and bake in
batches in the middle of the oven for 8 to 10 minutes, or until the
cookies are lightly browned.
