Eating Hazelnuts
Yes! Hazelnuts, also known as cobnuts or filberts, are great when eaten raw and become more flavorful and robust when roasted.
Like most nuts, they have a high, healthy fat content so make sure you refrigerate them to keep them from going bad. Raw hazelnuts will go rancid in 3 to 6 months in the pantry but will last up to 1 year in the refrigerator and even longer in the freezer.
If your raw hazelnuts smell paint-like or like rancid butter, they’re past their prime. While you probably won’t get sick after eating a couple of rancid hazelnuts, they aren’t particularly healthy (or tasty.)
While you can eat as many hazelnuts as your heart desires, a healthy daily intake of nuts is 30 grams or about 20 hazelnuts. If you’re trying to measure out quickly, a small handful will usually suffice. If you’re heard of an apple a day keeping the doctor away, a handful of hazelnuts will have similar results. Find out more about the nutritional benefits of hazelnuts below.

Holmquist History
Our DuChilly Hazelnuts have been well-known over the years for their distinct oblong shape, sweet flavor and unique thin skin. While DuChilly Hazelnuts have their benefits, they aren’t as hardy as other hazelnut crops.
The Eastern Filbert Blight overwhelmed many DuChilly orchards, including ours, so we’ve gradually scaled back on our production of the DuChilly. As far as we know, we are the last commercial grower of DuChilly in the United States.
While we’ll always have fond memories of the DuChilly, we’ve started to phase it out for other newer, more robust varieties that will help us deliver the quality our customers have come to expect from Holmquist Hazelnuts.

DuChilly hazelnuts – DISCONTINUED INDEFINTELY!
Thank you to our customers and fans for all the great years of support!
Sadly, we will not have any more Dry Roasted DuChilly to offer for Winter 2024/Spring 2025 due to the Eastern Filbert Blight as we have had less and less of them every year and 2023 was their final year.
Although we’ve had an email sign-up list for the Roasted DuChilly hazelnuts in the past, we will no longer be offering sign-up to be notified as they are no longer available. Note: If you’ve already sent us message with your email address we are sorry for any inconvenience. Thank you for your understanding.
At Holmquist Hazelnut Orchards, we have been growing a wide variety of hazelnuts since the 1920’s. Originally, we specialized in the DuChilly variety, but as mentioned above, that variety has since been scaled back.
Today, we offer the highest quality hazelnuts perfect for snacking, cooking, and baking. Don’t forget to check out our hazelnut flour, oil, or Belgian chocolate covered hazelnuts. There are even options for bulk ordering to save you time and money.
According to the most widely believed story, it’s due to the feast day of the French saint, St. Philbert. This celebration falls on August 20th which happens to be the same time hazelnuts are ready to be harvested.
No. We no longer sell the Ennis variety of hazelnuts.

Hazelnuts are high in fiber so they may help you stay regular. One ounce of raw hazelnuts (about 21 nuts) has 2.7 grams of dietary fiber.
Aside from keeping you regular, fiber can also lower cholesterol and help control blood sugar levels.
Only the raw hazelnuts are pasteurized (steam-treated).
Some of our hazelnuts do not have a label for nutritional facts. If it doesn’t, please contact us and we can usually get you a copy.
Proper Use & Storage
When it comes to storing hazelnuts, a good rule of thumb is that the more a nut has been processed (roasted, chopped, sliced, ground), the shorter the shelf life will be.
If you want to keep your hazelnuts fresh for longer, you can freeze them in airtight containers away from foods with strong odors. They will keep for over a year in the freezer, 1 year in the fridge, and 3-6 months in a pantry. If you do freeze your hazelnuts, bring them back to room temperature and use them immediately.
Roasting raw hazelnuts is the best way to remove their skins and can be done easily in an oven or a skillet. Roasting also helps enhance the natural flavor of the hazelnuts and adds an extra crunch once cooled.
Oven method: Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or foil and arrange hazelnuts in one single layer. Toast until golden brown and fragrant, about 10-15 minutes, stirring occasionally.
Oven method (Lower Temp. & Longer Time but more controlled): To roast kernels, spread whole, raw kernels in a single layer on a baking sheet and bake at 275 degrees F. for 15-20 minutes.
Stove-top method: In a medium skillet over medium heat, toast the hazelnuts until golden brown and fragrant, about 5-10 minutes, stirring the nuts occasionally.
To remove their skins: Place on a clean kitchen towel, cover, and let steam for 1 minute.
Rub off skins: Using the towel, gently rub the hazelnuts to release their skins.
Roasting Tips:
- Hazelnuts will firm up as they cool so test the flavor and firmness throughout the roasting process to get the hazelnuts to your liking.
- Going low temperature & slow is best when it comes to hazelnut roasting as the nutsy can scorch quickly!
- Spread out the hazelnuts in an even layer for the best results
- Not every variety will lose their skins entirely during the roasting process
Hazelnut Flour
Hazelnut flour can be used in most recipes that call for flour. If you’re just looking for extra flavor, try replacing 25-30% of the all-purpose flour in a recipe with hazelnut flour.
If you’re gluten-free and are looking for a 100% replacement, you may need to experiment with other ingredients for stabilizing, binding, and thickening.
Some of our favorite ways to use Hazelnut flour include:
Pancakes
Muffins
Waffles
Cakes
Cupcakes
Bread
Banana Bread
Biscuits
Shortcakes
Cookies
Brownies
Granola
Cinnamon Rolls
Calzones
Crackers
Gnocchi
Donuts
Macaroons
Breading
Torte Bars
Pesto
